Background

This is a recipe for Rosół - a type of Polish soup - made with chicken meat. It can be made with any part of the chicken but it is usually made with chicken legs, though chicken breasts work just fine!

Ingredients

For serving:

Parsley root can also be replaced with 2 medium sized parsnips, as parsley root can’t be easily found in some countries.

Cooking

1: The first step to making this soup is to chop up all your vegetables into medium sized chunks that are small enough to pick up with a spoon. An optional step is to bake the vegetables in the oven before you make them into soup, although I don’t find this to improve the taste much.

2: Your next step will be to put the vegetables into a big pot and then to fill that pot with cold water. The cold water will make the taste seep out of the vegetables and into the soup as it heats up. Add salt and pepper to the water.

3: Once you have all your ingredients in the pot turn the heat to medium until it starts boiling, and then lower the heat slightly and let it cook for 2 hours.

Serving

When the soup has finished cooking you can start making some pasta or kluski to go with the soup. Alternatively you can serve it with some fresh homemade bread. Cut up some fresh parsley and put it in the bowl when serving.

The soup should be yellow in color with little bubbles of oil on the surface. It should look kind of like this.
