This is a recipe for bećarac, which is a balkan food made by mixing boiled vegetables and eggs.
This recipe was shown to me by my lovely girlfriend. This recipe will give 2 large portions, perfect for two girls to eat together!
For serving:
1: Cut the tomatoes, peppers, onions, and garlic into small, bite sized pieces. Peel the carrot and grate it.
2: Add all the vegetables into a big pan with oil and a glass of water. Turn the stove to high heat and let it cook for a couple minutes.
3: Then fill the pan so that all the vegetables are just barely covered by water and let it simmer. Stir occasionally and let all the water boil off.
4: Once all the water is gone, add the egg and stir vigorously until the egg is cooked and it is all mixed together.
Salt it as you feel like by taste.
When the bećarac has finished cooking you can add cheese to it. For serving you also want bread to use to pick up the bećarac. The finished food should be orangeish with lumps of vegetables in it and be coated with egg.
