Feel free to change it up a little to better suit your tastes or what is available for you. ## Ingredients - 250 g egg noodles - 50 g spring onion - 150 g mushrooms - 150 g tofu/shrimp/chicken (protein) - 1 medium tomato - 150 g bean sprouts - 5 g ginger - 3 tablespoons cooking oil for the sauce: - 3 tablespoons tamarind paste - 5 tablespoons soy sauce - 3 teaspoons sugar ## Cooking Start by boiling the egg noodles and putting them to the side in a strainer. Then chop the spring onion, mushrooms, tomato, and tofu or chicken into small pieces, and grate the ginger. Start cooking the sauce in a small saucepan to the side. Add the onion, tomato, mushroom, bean sprouts, ginger, and your choice of protein into a wok pan or large frying pan with oil and put it to high heat. Let that cook for 5 minutes and add the noodles along with the sauce. Stir vigorously until everything is mixed together and coated in the sauce. Cook for another 5 minutes, and then it is ready! ## Serving The stir fry should be brown and filled with noodles and vegetables and smell mildly of ginger.
