It's very simple, nutricious, and filling! ## Ingredients - 250 g egg noodles - 250 g any mushrooms (I used a mushroom mix) - 30 g spring onion - 1 medium tomato - half a bell pepper - 75 g tofu - 3 tablespoons cooking oil For the sauce: - 5 tablespoons soy sauce - 1,5 tablespoons sugar - 1 tablespoon water ## Cooking 1: Start by boiling the egg noodles and putting them aside in a strainer. 2: Then start making the sauce in a saucepan by mixing all the ingredients together and putting it to medium heat so it starts boiling. 3: Chop all your vegetables, mushrooms, and tofu into small pieces and add them to your wok pan or large frying pan with oil. Put it to high heat and let some of the water boil off. 4: Then add the noodles and sauce and stir vigorously so that all gets mixed and coated with the sauce. 5: Let that fry for a couple more minutes and it is done! ## Serving The stir fry should be dark brown with pieces of vegetables and mushrooms in it.
